Creamy, tropical, and melt-in-your-mouth delicious – this Coconut Panna Cotta with mango mirror is like a vacation in a glass. Ingredients
- 400 ml full-fat coconut milk
- 200 ml heavy cream
- 60 g sugar (or 2 tbsp maple syrup)
- 1 tsp vanilla extract (or seeds of 1 vanilla bean)

4 sheets white Gelantine
For the mango mirror:
- 1 large ripe mango (approx. 250 g flesh)
- 1–2 tsp lime juice
- Optional: 1 tsp powdered sugar or honey (to taste)
Directions
Soften the gelatin:
Soak the gelatin sheets in a bowl of cold water for about 5 minutes, until soft.Heat the coconut base (5 min):
In a saucepan, combine coconut milk, cream, sugar, and vanilla. Gently heat over medium heat to no more than 70 °C (160 °F) – do not boil!
→ Important: Gelatin loses its ability to set properly above 80 °C / 175 °F.Dissolve the gelatin:
Remove the pot from the heat. Squeeze out the excess water from the gelatin and stir it into the hot (not boiling!) mixture until fully dissolved.Fill and chill (at least 4 hr):
Pour the mixture evenly into 4 serving glasses. Let cool slightly, then refrigerate for at least 4 hours, preferably overnight, until set.Prepare the mango mirror (5 min):
Peel, pit and purée the mango until smooth. Add lime juice and sweeten to taste if needed.Assemble & serve:
Spoon the mango purée gently over the firm panna cotta just before serving. Garnish with fresh mint, toasted coconut flakes or a touch of lime zest.
