This vanilla crescent granola is a delicious and aromatic combination of almonds, hazelnuts and vanilla. It tastes like the popular vanilla crescent biscuits, but in a crunchy, healthy granola version. Perfect for a festive breakfast or as a snack between meals!

Ingredients
- 250 g oat flakes (wholegrain)
- 50 g almonds (whole or halved)
- 50 g hazelnuts (whole or halved)
- 50 g ground almonds
- 1 tbsp maple syrup or honey
- 1 tbsp vanilla sugar
- 3 tbsp coconut oil (melted)
- 1 vanilla pod or 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 pinch of salt
- 2 tsp icing sugar
Directions
Preheat the oven: Preheat the oven to 160°C (fan) and line a baking tray with baking paper.
Mix the ingredients: Mix all the dry ingredients and spices in a bowl. In another bowl, melt the coconut oil and mix in all the other wet and moist ingredients.
Combine everything: Pour the liquid mixture over the dry ingredients and mix well so that everything is evenly coated.
Bake: Spread the mixture evenly over the baking tray. Bake in the oven for 20–25 minutes, stirring every 7–10 minutes so that the granola turns an even golden brown. Be careful not to burn it!
Let cool: Remove the granola from the oven and let it cool on the baking tray. It will become crispy as it cools.
Finishing touches: Once the granola has cooled, you can sift on the two tablespoons of powdered sugar and roll in it to get a typical vanilla kipferl flavour.
Store in an airtight container to keep it fresh.

Enjoy your vanilla crescent granola with yoghurt, milk or a plant-based alternative. It is also delicious as a topping for porridge or smoothie bowls!
