Italian Cantuccini – Italian Christmas biscuits 🍪🇮🇹

Ingredients
- 250 g flour
- 200 g sugar
- 2 eggs
- 1 egg yolk (for brushing)
- 1 tsp baking powder
- 1 pinch of salt
- 1 tsp vanilla extract or the pulp of a vanilla pod
- 150 g whole almonds (unpeeled, roasted)

1 tsp grated lemon peel
Directions
Prepare the dough: Mix the flour, sugar, baking powder and salt in a large bowl.Add the eggs and vanilla extract, knead everything into a smooth dough. Knead in the almonds and, the lemon peel until they are evenly distributed.
Forming the dough: Divide the dough into two equal portions. Form each portion into a roll that is approx. 4 cm thick and 25 cm long.
Baking (1st round): Preheat the oven to 180 °C (top/bottom heat). Place the rolls on a baking tray lined with baking paper and brush with the egg yolk.
Bake for about 20-25 minutes until lightly golden brown.Cut into slices: Remove the rolls from the oven, allow to cool briefly and cut into 1-2 cm thick slices at an angle using a sharp knife.
Bake again (second time): Place the slices flat on the baking tray and bake for another 5-10 minutes until golden brown and crispy.
Allow the cantuccini to cool completely.
Recipe Note
Roast the almonds in a dry pan beforehand. This enhances the nutty aroma and gives the cantuccini a more intense flavour. Use a serrated knife to cut the rolls – this way they won't break. If they are still difficult to cut, let them cool a little longer.
