Ingredients
for the dough:
- 500 g wheat flour
- 75 g sugar
- 42 g fresh yeast
- 250 ml lukewarm milk
- 75 g butter (melted)
- 2 eggs
- 1 tsp salt
- 1 tsp vanilla extract
for the filling:
- 100 g butter (soft)
- 100 g brown sugar
- 2 tbsp cinnamon
For the icing:
- 100 g cream cheese
- 100 g icing sugar
- vanilla
Directions
Prepare the dough:
In a large bowl, mix the flour and salt.
In another bowl, mix the lukewarm milk, melted butter, sugar and yeast.
Add the eggs and the milk-yeast mixture.
Knead everything well until a smooth dough is formed.
Let the dough rise in a warm place for about an hour, until it has doubled in size.
Second rising time:
After the first rising time, briefly knead the dough again, shape it into a ball to prevent stretching, and then let it rise again for about 45 minutes until it rises again.
Filling and moulding:
In a bowl, mix the softened butter, brown sugar and cinnamon until a smooth paste is formed.
On a floured surface, roll out the dough to 0.5-0.7 cm, spread the filling on top and roll up. Cut into pieces about 3 cm thick and place on a baking tray.
Third rise:
Cover the cinnamon rolls and let them rise again for about 30-45 minutes.
Baking
Preheat the oven to 180°C (top/bottom heat). Bake the cinnamon rolls for about 20-25 minutes until golden brown. Make sure they don't get too dark.
Prepare the glaze:
While the cinnamon rolls are baking, mix the icing sugar with the cream cheese and vanilla extract until smooth. The glaze should have a creamy consistency.
To finish:
Let the cinnamon rolls cool briefly after baking and then drizzle the glaze over them.
Recipe Note
I know that my dough needs a lot of resting time, but believe me, this makes my cinnamon rolls irresistibly fluffy and moist. Try out different fillings and add a few pieces of apple or other types of fruit. Simply heavenly, and please don't count the calories for this sin :)
