My soft pita bread recipe is perfect for anyone who loves soft, fluffy and versatile flatbread! Ideal as an accompaniment to grilled dishes, as a base for delicious sandwiches or for dipping in hummus and sauces – this pita bread is easy to prepare and is a success even for beginners. The dough turns out particularly fluffy and light when it has enough time to rise, and can be baked in a pan or in the oven. A real kitchen all-rounder that is also great for meal prep and can be frozen for storage.

Ingredients
- 500 g wheat flour
- 300 ml warm water
- 1 sachet of dry yeast (7 g)
- 2 tsp salt
- 1 pinch of sugar
- 2 tbsp olive oil
Directions
Prepare the yeast: In a small bowl, mix the warm water with the sugar and dry yeast. Wait a few minutes until it becomes frothy, which is a sign that the yeast is active.
Knead the dough: Mix the flour and salt in a large bowl, then add the foamy yeast mixture and olive oil. Knead everything into an even dough.
Cover the dough and leave to rest in a warm place for 1 hour. (or let it rise for 24 hours in the refrigerator.)
Shape the pitas: Place the risen dough on a floured work surface and divide into 8-10 portions.
Then stretch the small pieces of dough and let them rest, covered, for another 30 minutes.
Then roll out the small dough balls into 4-5 mm thick flatbreads.
Bake: Heat a frying pan over a medium heat. Place each flatbread individually in the dry, hot pan. Bake each side for 2-3 minutes until the pita puffs up and gets golden brown spots.
Alternatively, you can also bake the rolled-out flatbread in the oven at 180°C top and bottom heat for 5-7 minutes.
Stack the finished pitas under a clean cloth to keep them warm and soft.
Recipe Note
Form each pita as gently as possible and let the dough rest again briefly after rolling it out – about 10-15 minutes. This creates small air bubbles that cause the pita bread to ‘puff up’ during baking and make it soft and airy on the inside.
