Ingredients
- 1/4 watermelon (about 500 g), cut into cubes
- 200 g feta cheese, crumbled
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup fresh basil leaves, roughly chopped
- 1/4 cup toasted pine nuts (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze or reduced balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Directions
Prepare the watermelon: Cut the watermelon into bite-sized cubes and place in a large bowl.
Mix the herbs: Sprinkle the chopped mint and basil leaves over the watermelon cubes.
Feta and pine nuts: Crumble the feta cheese over the salad and sprinkle the toasted pine nuts (if using) on top.
Dressing: In a small bowl, mix the olive oil, balsamic vinegar and honey well. Flavour with salt and pepper.
Serve: Drizzle the dressing over the salad and mix gently.
