Ingredients
-
500g minced beef
-
1 onion, chopped
-
2 garlic cloves, chopped
-
1 sweet pepper, diced
-
1 tin of sweetcorn
-
1 tin of chopped tomatoes
-
1 tin of kidney beans, drained and rinsed
-
1 tsp ground cumin
-
1 tsp paprika powder
-
1 tsp chilli powder (adjust to taste)
-
1 tbsp tomato purée
-
Salt and pepper to taste
-
Optional: fresh chilli for extra heat, sour cream to serve
Directions
Brown the minced beef in a large saucepan over a medium heat until browned.
Finely dice the onion, capsicum and garlic and add to the beef and fry for a further 2-3 minutes until softened.
Add the tablespoon of tomato puree and fry for a minute, then deglaze with about 350ml of water
Add the chopped tomatoes, drained kidney beans, sweetcorn, spices to the pan and stir well.
Simmer the chilli for about 30-60 minutes, stirring occasionally.
optional serve with sour cream, rice and fresh chilli pepper
Recipe Note
If the chillie con carne is a little too thick, you can simply add water or broth.
I always enjoy mine with some fresh white bread and sour cream.
