Ingredients

185 g butter
-
85 g wheat flour
-
40 g cocoa powder
-
50 g white chocolate
-
50 g milk chocolate
-
185 g dark chocolate
-
3 large eggs
-
200g brown sugar
Directions
Preheat the oven to 180°C and grease the baking tin or line a baking tray with baking paper
Melt the butter and dark chocolate over a bain-marie or in the microwave
Beat the eggs and sugar with a mixer until they are light yellow in colour
Stir in the melted chocolate mixture quickly but carefully.
Sift in the flour and cocoa and fold in
Roughly chop the white and milk chocolate and incorporate. (do not stir for too long otherwise you will knock all the air out of the cake batter)
Pour the batter into the tin and smooth out.
Bake for 25-30 minutes, only cut when cool
Recipe Note
(If you shake the tin, the inner centre should no longer wobble too much but be more stable -or stick a wooden stick in the middle and if it comes out without dough, the brownie is ready)
