Refreshing citrus-rosemary syrup recipe

Ingredients

  • 5 large lemons
  • 5 large oranges
  • 5 sprigs of fresh rosemary
  • 600-800 g sugar

Directions

  1. Squeeze the juice from the lemons and oranges and pour it into a saucepan.

  2. Add the squeezed citrus fruits, rosemary sprigs and sugar to the pan.

  3. Allow the mixture to simmer (about 15-20 min) until the sugar has completely dissolved and the syrup has thickened slightly. Stir occasionally.

  4. Remove the pan from the heat and allow the syrup to cool slightly.

  5. Strain through a fine sieve or cheesecloth to remove the solids and keep only the clear syrup.

  6. Pour the syrup into sterilised bottles or jars and store in the fridge.
