Ingredients

3 egg whites (from medium-sized eggs)
220 g icing sugar
1 tsp lemon juice
1 sachet of vanilla sugar
1 tsp cinnamon
300 g ground almonds
50 g icing sugar (for the work surface)

Directions

Whip the egg whites: Beat the egg whites in a clean bowl until stiff. Gradually add the icing sugar and lemon juice, continuing to beat, until the mixture is glossy and firm.
Prepare the dough: Set aside 2-3 tablespoons of the egg white mixture (this is the icing for later). Fold the cinnamon, vanilla sugar and ground almonds into the remaining egg white mixture and knead everything into a dough.
Roll out the dough: Roll out the dough on a surface dusted with icing sugar to a thickness of about 0.5 cm.
Cut out stars: Use a star-shaped cutter to cut out cinnamon stars and place them on a baking tray lined with baking paper.
Apply the glaze: Use a brush to spread the reserved egg white glaze evenly over the cut-out stars.
Bake: Bake the cinnamon stars in a preheated oven at 130°C (top/bottom heat) for about 15-25 minutes. They should be slightly dry but not too hard.
Allow to cool: Let the cinnamon stars cool on a rack and enjoy!

Recipe Note

Tip:

Make sure not to overbake the stars so that they remain nice and soft on the inside. Depending on the oven, the cinnamon stars may be ready after just 15 minutes. If your dough is not easy to work with, you can also let it chill in the refrigerator for an hour or fold in a handful of almonds. The dough should be kneadable but still soft.
