Classic Stuffed Cabbage Rolls 🥬

Ingredients
For the rolls
- 1 large white cabbage
- 600 g ground pork & beef
- 1 large onion (about 120 g)
- 2 garlic cloves (about 8 g)
- 1 stale bread roll (50 g) or 30 g breadcrumbs
- 1 egg (M)
- 1 tsp sweet paprika
- 1 tsp marjoram
- 1 tsp mustard
- 8 g salt
- 3 g black pepper
- 20 g butter
- 1 tbsp oil
For the sauce
- 40 g tomato paste
- 500 ml beef broth
- 100 ml cream
- 1 tsp sugar
- 1 bay leaf
- 1 tsp cornstarch
- 20 g butter
Directions
Prepare the cabbage
Cut out the core in a wedge and place the whole cabbage in boiling water. Remove softened leaves one by one until you have enough. Trim thick veins flat for easier rolling.Soak the bread roll
Soak the roll in water, squeeze well and tear apart. Keep breadcrumbs ready if using.Prepare onion and garlic
Finely dice the onion and finely chop the garlic.Mix the filling
Combine ground meat, onion, garlic, egg, soaked bread, paprika, marjoram, mustard, salt and pepper. Mix thoroughly.Fill the leaves
Lay out a cabbage leaf, spoon the filling in the center, fold in the sides and roll tightly. Secure with string or toothpicks.Brown the rolls with butter
Heat oil and melt butter in a pot. Brown the cabbage rolls on all sides until golden.Roast the tomato paste
Remove the rolls briefly. Add tomato paste to the pot and roast until lightly caramelized.Build the sauce
Deglaze with broth, stir in sugar, bay leaf and cream. Place the rolls back into the pot.Braise
Cover and simmer until the rolls are tender, turning once during cooking.Finish the sauce
Remove the rolls. Add butter, stir in cornstarch mixed with cold water and briefly simmer until the sauce thickens. Season to taste.
