Irresistibly fluffy and quick to prepare.The trick with my pancakes is that you don't mix the eggs 100% with the batter.This allows the eggs to rise a little more and gives our pancakes the typical fluffiness without beating up the egg whites.

Ingredients

250g wheat flour
-
50g sugar
-
20g baking powder
-
A pinch of salt
-
2 eggs
-
360ml milk
-
60ml melted butter
-
vanilla extract
Directions
In a large bowl, mix together the dry ingredients (the flour, sugar, baking powder and salt).
In a separate bowl, whisk together the milk, vanilla extract and melted butter.
Add the wet ingredients to the dry ingredients and mix well, then add the two eggs and mix briefly (do not mix the eggs completely into the batter)
Preheat a frying pan over a medium heat and grease lightly.
Pour a ladle of batter into the pan and fry the pancakes for about 2-4 minutes on each side.
Enjoy the finished pancakes with maple syrup, ice cream, nutella, white chocolate or fruit for a healthy alternative
