Soft Vanilla crescent cookies

Ingredients

  • 250 g butter
  • 70 g icing sugar
  • 1 sachet (8 g) vanilla sugar
  • 1 egg yolk
  • 320 g flour (type W 700)
  • 75 g ground almonds

For dusting:

  • 50-100 g icing sugar
  • 2 sachets vanilla sugar

Directions

  1. Put the butter, sifted icing sugar, vanilla sugar, egg yolk, flour and almonds in a bowl.

  2. Knead all the ingredients quickly and thoroughly to form a dough. Tip: the dough should not be kneaded for too long, otherwise it will be difficult to work with.

  3. Form the dough into a ball and leave to rest in the refrigerator for at least one to two hours.

  4. Divide the dough into small portions, form crescents and place on a baking tray lined with baking paper.

  5. Bake the vanilla crescents at 175°C (top/bottom heat) for about 9-11 minutes until golden brown.

  6. Once they have come out of the oven, turn the biscuits while they are still warm in a mixture of icing sugar and vanilla sugar or sift it over them, then leave them to cool completely.
