Simply mix one part syrup with 4 parts prosecco and one part soda for your refreshing summer cocktail.

Ingredients
-
500 g rhubarb
-
400 g sugar
-
Juice of one lemon
-
500 ml water
-
1 vanilla pod
Directions
Prepare the rhubarb and cut into pieces.
Cut the vanilla pod in half lengthways and scrape out the seeds.
Mix the rhubarb, sugar, lemon juice, water, vanilla pulp and vanilla pod in a pan and bring to the boil.
Simmer over a medium heat until the rhubarb is soft and the sugar has dissolved.
Strain the syrup through a sieve or cloth and press well.
Pour the syrup and vanilla pod into bottles and seal.
Store in the fridge and shake well before use.
