My recipe for stuffed peppers is not only quick and full of Mediterranean flavours, but also ideal for a high-protein, low-carb diet. Perfect for quick lunches or prepping for the whole week.

Ingredients
-
4 large peppers
-
250g minced meat (beef or mixed)
-
1 onion, chopped
-
2 cloves of garlic, chopped
-
1 tin of chopped tomatoes
-
1 tsp paprika powder
-
spices Cayenne pepper, rosemary, marjoram, lemon zest
-
Salt and pepper to taste
-
100 g grated cheese for gratinating
-
200 g sour cream
Directions
Prepare the peppers: Cut off the tops of the peppers and remove the seeds and white membranes inside. Rinse them briefly and set them aside.
Prepare the filling: Heat a little oil in a pan and fry the minced meat in it until it turns slightly brown.
Add the chopped onion and garlic and fry for another 3-4 minutes until the onions are soft and translucent.Add the chopped tomatoes from the tin and stir well.Seasoning: Add the paprika, cayenne pepper, a pinch of rosemary, marjoram and a little lemon zest. Season with salt and pepper.Mix everything together well and simmer the filling for about 5 minutes until it thickens slightly.
Fill the peppers and bake: Preheat the oven to 180°C.
Fill the prepared peppers generously with the minced meat mixture.Bake: Bake the stuffed peppers in the preheated oven for about 20 minutes until they are almost done and then sprinkle with the cheese. Leave to gratinate for another 5-10 minutes.
Serve: Remove the stuffed peppers and serve with rice and sour cream.
Recipe Note
I always enjoy my stuffed peppers with some rice and sour cream. You can also experiment with the filling and add lentils or potatoes.
